Quality Assessment of Pulse Grains Based On Image Analysis

چکیده

Food Quality is the quality characteristics of food that is acceptable to consumers. This includes external factors as appearance (size,shape, color, gloss) texture and flavor factors. Most of these characteristics are assessed visually by an expert. But the results are not up to the mark as the results may vary from one expert to another. Also the results are influenced by some external factors like bias, fatigue and knowledge. So an alternative approach is needed which overcomes all these shortcomings. This paper presents such an approach based on image analysis of the sample. Keywords—Analysis, Assessment, Food, Image, Quality
